I have a soft spot for homemade gifts. As a child I remember looking forward to receiving the bag of chocolate-covered chex mix that Mrs. Gilmore would make and share at Christmastime. In my adult years, December visits to my parents’ home often included homemade chocolates and jams from the lady down the street. There’s nothing better than a carefully-selected, perfect-for-me gift. Except maybe something made with love.
So this year I decided to share some of the homemade love with those around me. One of these treats is apple cinnamon buckwheat bunches. It makes a great gift because it’s novel, healthy and (most importantly) tasty.
I like to keep the recipe simple: just apples, dates, cinnamon and walnuts. But you could add in other spices (e.g., nutmeg, cloves), nuts/seeds (e.g., sunflower seeds, slivered almonds) or dried fruit (e.g., cranberries, raisins) if you wish.
If I could get a consistent, inexpensive supply of buckwheat here, I’d keep a container of apple cinnamon bunches in my purse at all times (refilling it regularly, of course). I think it might also replace my current go-to granola because to me, it’s that good, which also makes it a great gift.
Apple Cinnamon Buckwheat Bunches
2 c. sprouted buckwheat
8 dates, pitted
1-2 Tbsp. water or apple juice, as needed to blend
1-2 tsp. cinnamon, according to taste
1/4 c. walnuts, soaked overnight, broken into pieces
Instructions: Soak and sprout buckwheat (instructions for sprouting buckwheat here). Combine apple and dates in a blender and blend until the consistency of apple sauce, adding water or juice a little at a time to facilitate blending. Combine apple sauce, buckwheat, cinnamon and walnuts. Drop onto lined dehydrator sheets in bunches and dehydrate overnight at 105F. Enjoy as a cereal with milk or simply snack on it dry. Better yet, package it in a jar with a ribbon and share the joy!
